I pulled the Smoked rib roast of the traeger as soon as it hit 130. I then let it sit for roughly 2 hours.
Sous Vide was done at 137F degrees for 6 hours. Patted dry, reapplied seasoning and throw it in the oven for 20 minutes at 500 degrees to develop a nice crust!
