Recipe:
9 inch pan
1 cup = 250 ml
Sweet Shortcrust Pastry:
1 1/3 cup (240 g) all-purpose flour
½ tsp baking powder
120 g butter, softened, room t
¼ cup (60 g) sugar
pinch of salt
1 medium egg
refrigerate the dough for 15-20 minutes, then spread Frangipane and put apricots and raspberries on top.
Frangipane:
~ ½ cup (60 g ) almonds (toasted in oven) or 60 g ground almonds (flour)
¼ cup (60 g) sugar
60 g butter, room t
1 medium egg
1 tsp vanilla extract
Topping:
~ 400 g apricots
2 tbsp almond flakes
180° C / 360 F 40-45 minutes until golden brown
