Putting up moose and caribou meat in the Yukon River villages often entails days of butchering and processing due to the size of the animals. Everyone has little tricks and methods. Moose hunting can yield many hundreds of pounds of meat and you need a good way to deal with a years supply all at once. In the older days much more meat was canned and dried but with modern day freezers that has changed some. Video is mostly trying to show how we do things.
