Irresistible Date and Pistachio Snacks Recipe 🌰🍫

Ingredients:
Date Layer:
• 18 medium dates (about 80g)
• 80g pecans, finely chopped
• 1 heaping tablespoon of peanut butter (approx. 35g)
Pistachio Layer:
• 150g pistachios, finely ground
• 3 tablespoons honey (about 60g)
• 1/2 teaspoon cinnamon
Chocolate Icing:
• 100g dark chocolate, chopped
• 1 tablespoon coconut oil
Step-by-Step Preparation:
1. Make the Date Layer:
• Begin by opening each date, removing the pits, and chopping them well.
• In a mixing bowl, combine the dates, finely chopped pecans, and peanut butter. Mix thoroughly until the mixture is smooth and sticky.
• Line a 20x20 cm rectangular pan with baking paper. Spread the date mixture evenly in the pan, using a palette knife to smooth it out. Place the pan in the freezer for about 10 minutes to set.
2. Create the Pistachio Layer:
• Grind the pistachios into fine crumbs and add honey and cinnamon. Stir until you get a sticky, well-combined mixture.
• Spread this pistachio layer over the chilled date layer, pressing down gently to make sure it sticks and smooths out evenly.
3. Cut and Chill:
• Carefully lift the layers from the pan and cut into evenly-sized snack bars or squares.
• Return the pieces to the freezer for another 10 minutes to firm up before adding the icing.
4. Chocolate Icing:
• In a microwave-safe bowl, add the chopped dark chocolate and coconut oil. Melt in short bursts, stirring in between until smooth and fully melted.
• Place a wire rack over a baking sheet to catch any drips. Dip each snack piece in the melted chocolate to coat. Sprinkle a pinch of coarse salt on top of each piece for added flavor.
• Keep the treats refrigerated until ready to serve.

For the date layer- 18 Tamar Medium units 80g pecans A heaping tablespoon of peanut butter = 35g
For the pistachio layer- 150g pistachios 3 tbsp honey = 60g 1/2 teaspoon cinnamon
For icing-
100g dark chocolate 1 tablespoon coconut oil
How to prepare- We will start with the date layer - we will open the dates and take out the kernel for them, chop them well and transfer to a bowl, add flattened pecans to thin crumbs and peanut
butter mix everything together for butter, mix everything together for a smooth mixture.
In a 20x20 rectangular pan lined with baking paper, place the mixture and straighten with a palette, put in the freezer for about 10 minutes.
In the meantime, we will move to the
pistachio layer - grind the pistachios
into thin crumbs and add honey and
cinnamon, mix together well until you
get a sticky mixture and place over
the layer of dates and straighten well.
Extract from the pan and cut into
even-sized snacks, put in the freezer
before icing for 10 minutes. For icing - in a bowl we will put chocolate and coconut oil and melt in micro pulses, place the snacks on a wire rack and watch each one in chocolate, sprinkle over a little coarse salt and keep refrigerated, that's all enjoy!
