Ingredients:
- Pasta - 10 oz (300 g)
- Mushrooms - 7-9 oz (200-250 g)
- Spinach - 3.5-5 oz (100-150 g) (fresh or frozen)
- Heavy cream (10%) - ¾ cup (200 ml)
- Vegetable broth - ¾ cup (200 ml)
- Onion - 1 small
- Vegetable oil - 1-2 tbsp
- Parmesan cheese - 2-3 oz (50-70 g)
- Salt and pepper - to taste
Slice the mushrooms thinly. Chop the onion finely and mince the garlic.
In a heated pan, sauté the mushrooms until golden brown, then transfer them to a plate.
In the same pan, sauté the onion and garlic until golden. Add the broth and mushrooms, and simmer for 5 minutes.
Cook the pasta according to the package instructions until al dente.
Add the cream to the mushrooms, reduce the heat, and stir in the spinach. Cook for about 5 minutes.
Season with salt and pepper to taste.
Add the pasta to the sauce in the pan and toss to combine.
Serve the pasta topped with grated Parmesan cheese.
