My mother-in-law is always trying new recipes and this nut bar recipe is one of them! These delicious nut bars are easy to make and very versatile. They are a great snack for travelling! You can add many different ingredients, or you can keep them simple with only a few different types of nuts and/or seeds - the choice is yours!
The binding agent we use is called Gur or Jaggery. This is found in Indian Grocery shops and it's basically sugarcane juice cooked until it becomes solid, unrefined sugar. The darker it is, the better, more natural and less processed it is.
We also use peanut butter if there is not enough melted jaggery and this adds an extra nutty flavour to these nut bars.

INGREDIENTS
1/4 Cup Each of Salted Peanuts, Raw Cashews, Almonds, Walnuts, Mixed Seeds, Oats, Coconut Flakes
1 TBSP Gundar (Kibble Gum)
1 tsp Coconut Oil (optional)
1/2 Cup Gur / Jaggery or more, if needed
2 TBSP Peanut Butter (optional)
A pinch of Spices (For example Ginger Powder, Cinnamon Powder, Cardamom Powder)
