[RECIPE IN THIS DESCRIPTION] Double Chocolate Protein Cookies.
This microwaved sweet treat is similar to the hot cookies you can get at Pizza Hut (from what I remember over 8 years ago!). They are a little bit higher on the carb size for a single serving BUT they are very filling from the coconut flour and protein powder.

INGREDIENTS:
- 20g (0.7oz) Dark Chocolate, divided (I used 85% Lindt)
- 2 tbsp Salted Butter
- 1/2 tsp Vanilla Extract
- 1 Large Egg
- 1 tbsp Almond Flour
- 2 tbsp Coconut Flour
- 1 tbsp Sweetener
- 2 tbsp Protein Powder (I used Rocky Road by MyProtein)
- 1.5 tbsp Cocoa Powder (ALWAYS CHECK CARBS BEFORE BUYING)
METHOD:
1. Start by greasing two small plates with a little bit of oil.
2. In a medium, microwave safe bowl, add the butter and half the chocolate. Microwave, on high, for 1 minute. Stir and repeat if the chocolate has not fully melted.
3. To the melted chocolate, add all ingredients EXCEPT the remaining chocolate. Use a spatula to mix until you have a well combined dough.
4. Roughly chop the remaining chocolate and add to the dough. Fold until well incorporated.
5. Split the dough in half and shape each half into a cookie shape on the greased plates. Microwave each, on high, for 1 minute. Enjoy!
