This Aubergine curry or you may know it as Aubergine Bhaji or Brinjal Bhaji is delicious and easy to make at home. If you are like me and do not eat many vegetables this is a must try curry. This is the way I get my veggies simply delicious!

Ingredients
Aubergine
Oil
pinch of salt
1 tbsp garlic and ginger paste
2 chilies smashed
7 tbsp onion paste - see below
3 tbsp tomato puree watered to 9 tbsp water
1 tbsp level mixed powder - see below
1 tsp kasoori methi - ADD THE METHI TOWARDS THE END OF COOKING TO AVOID BITTERNESS
1 heaped tsp kashmiri chili powder
1 tsp garam masala
1/2 tsp turmeric powder
½ tsp coriander powder
½ tsp salt
chopped tomatoes
chopped coriander
NOTE: ADD THE METHI TOWARDS THE END OF COOKING TO AVOID BITTERNESS - I was using oldish Methi with hardly any flavour
