A compilation of videos taken during the Festival del Chocolate in Tabasco, MX between 2015 and 2019.
The Festival takes place in late-November each year at the Parque Doria Maria. Over the course of five days (Wed-Sun) the festival attracts over 100,000 visitors, making it one of the largest chocolate festivals in the world – and one that few people outside Mexico know about.
Exhibit space is free to exhibitors and entrance is free as well. There is always an expansive food court with live music in the evenings making the festival a place locals will go for lunch and take their families to for dinner.
In addition to hundreds of stands selling chocolate, confections, local specialties such as garapiñado, and more there is an extensive education program with presentations aimed at cocoa farmers and cocoa and chocolate professionals, tastings for chocolate fans, cooking demonstrations by famous local and international chefs, art shows, and an artisanal crafts market that also includes local food specialties such as queso ahumado (smoked cheese).
Segments in order:
1) A demonstration of making traditional drinking chocolate with a molinillo.
2) Making a molinillo using a foot-operated lathe.
3) Table-tempering chocolate on a marble slab.
4) A gallery of paintings and sculpture.
5) A walk-through showing some of the festival exhibitors.
6) Making caramelized white chocolate at Chocolates Wolter.
7) Grinding cocoa nibs into cocoa liquor in an antique melanger, also at Chocolates Wolter.
