L'Atelier de Joël Robuchon Miami Valentine's Day Menu 2020
Joël Robuchon is one of the most celebrated chefs of all time! He passed in 2018 but his legacy is still very much alive and well. He holds the record for most Michelin stars held by a chef at 32 stars.
Only a few months ago this space was made available to Miami foodies and we're so very grateful. I've been to the restaurant in it's New York location but was interested to see if they were able to replicate that experience for eager Floridians to enjoy.
Although there were a couple of hiccups with the service and they replicated ingredients more than they should have throughout the tasting menu it was still a memorable experience.
Amuse Bouche:
Parsnip espuma, blood orange reduction
Foie gras Royale, parmesan foam, emulsion of Maury "Vielles Vignes"
1st Course:
Caviar and Alaskan king crab, crustacean jelly, celery vanilla cream
Hamachi Sashimi, cilantro guacamole, yuzu dressing
2nd Course:
Langoustine ravioli, black truffle, foie gras sauce
Black truffle "Parisian gnocchi", celeriac, mimolette tuile
Main Course:
Wild Atlantic black bass, shiitake chutney, middleneck clam, curry emulsion
Grilled Wagyu ribcap, peppercorn sauce, winter vegetable medley, black truffle
Pre Dessert:
Rum gelée, mint sorbet, lime foam
Dessert:
Passion fruit mousse and coulis, chocolate sherbet, cake, crumble
Lemon sorbet with rasberries
Mignardise:
Passion fruit marshmallow, tequila
