Lemon Chicken Soup
Ingredients

-1 1/2 LB Chicken Thighs
-1/2 Large Yellow Onion
-3 Celery Stock
-4 Carrots
-1/2 Lemon
-2 TBSP Lemon Zest
-8 Cups of low-sodium Chicken Stock
-3 TBSP ginger
-3 TBSP of Unsalted Butter
-Chicken Boullion
-2 Bay Leaves
-2 Strands of Thyme
-Flat Italian Parsley
Directions

1. Sear the chicken over avocado oil in medium-high heat (2-3 minutes per side)
2. Remove the chicken then lower the heat to medium. Slowly add in the butter then the veggies. Stir for 2 minutes.
3. Add in the lemon zest stir then add 1 TSP of Chicken Bullion and ! TSP of Roasted Garlic Bullion. (You Can add any bullion to elevate the flavors.
4. Slowly Pour in the chicken broth and throw in bay leaves and thyme. Once the Soup comes to a boil cover and simmer on low heat for 25 minutes.
5. Serve with rice or add some egg noodles to the soup.
