Continuing the FOOD ODYSSEY ⛵️With thoughts about the clear blue and turquoise waters of the Mediterranean Sea, here is a delightful classic to spawn feelings of coming lazy and wonderful summer nights.
3 Ib rib eye steak or lamb or ground meet( I use both, rib eye and ground meat)
1 large onion juice
1 small garlic minced garlic
1/2 cup buttermilk
1/4 cup olive oil
Salt, pepper
1 tsp dry basil
1/2 tsp paprika
For the İskender
Pide
Tomato Sauce
Butter
Plain yogurt
For the Döner/Gyros
Pita breads
Yogurt sauce
Tomato slices
Onion slices
Lettuce
Instructions;
For the Döner/Gyros
Prepare the meat if the meat thick using a meat tenderizer pound the meat pieces a little bit, set aside.
In a bowl, add onion water, buttermilk, garlic, oil, salt and spices and whisk together until combine.
Add the meets into the marinade sauce and stir until coat each piece with this marination well.
Place a big piece of parchment paper onto a work surface and place the meet on top of the paper. Wrap the meat in parchment paper. Tightly close both ends and wrap it like a candy wrapper. Keep it in the freezer overnight.
The next day:
Transfer the gyro from the freezer to the refrigerator 2 hours ago before cooking and let it defrost to cut easy.
Meanwhile prapared the bread dough: the recipe and instructions in the comments.
Place the meat on a cutting board and using a sharp knife, slice as thinly as possible.
Heat a skillet over medium-high heat and add a little olive oil. Place 6-7 pieces meat and cook for 2-3 min. Avoid to cook all the meat pieces at the same time. Repeat the process with remaining meat.
Preparing iskender:
Slice the pide squares and place on a serving plate. Place the cooked gyros over the bread. Pour tomato sauce and and melted butter. Serve with plain yogurt.
For the Döner/Gyro wrap;
On a Pita bread, Spread yogurt sauce on top, place the cooked gyros and top with lettuce, tomato and onion. Seson with red pepper flakes and wrap. Serve immediately .
