Works great as a side dish or mono meal and even better to meal prep and freeze for later use. Bake at 500 degrees (f) for 15 to 20 minutes
Or 400 degrees (f) for 30-35 minutes
Ingredients
2 to 3 pounds of carrots
3 Tbsp butter
1/2 Tbsp oil (olive oil)
1 Tbsp of honey
1 Tbsp of piloncillo/ panocha or (brown sugar- molasses)
3 minced garlic cloves
Sprig of rosemary (optional)
1 tsp black pepper (1/2 tsp if you don’t like spice)
1 tsp onion powder
1/2 tsp salt
garnish with parsley or cilantro
Tip❣️
Meal prep- Bake for 15 minutes at 500 degrees (f) to keep a good bite after you thaw the carrots out and warm them up.
Warm them up on a pan at medium heat- add 3 Tbsp of water and cover with a lid for 5 to 8 minutes or microwave for 4 minutes
After roasting carrots they will look a little dry, don’t worry gloss them up by giving them a loving mix
Recipe steps
Preheat oven to 500 degrees (f)
Peel carrots and slice into desired shape
Place pan on medium heat and add oil and butter
Add rosemary and garlic, infuse for 30 seconds, and remove
Add honey and piloncillo/ sugar fully combine
Turn the burner off and fully combine
Add carrots and season with salt, black pepper, onion powder and fully combine
Place on baking sheet
Bake at 500 degrees (f) for 15 to 20 minutes
