Goa Roast Chicken
1 kg chicken drumsticks
1 tbsp ginger garlic green chilli paste
1/2 lemon
2 tsp coriander powder
1/2 tsp cumin powder
Salt to taste
1 tsp freshly ground pepper
2 onions (finely chopped)
2 tsp cumin seeds
1 star anise
2 badi elaichi
4 green cardamoms
3 pieces cinnamon
4-5 cloves
2 bay leaves
3 tbsp ghee (clarified butter)
3 potatoes (cubed and parboiled)
2 tbsp cornflour
Salt
Oil for frying
Method
Marinate the chicken as shown in the video and keep it for 30 minutes . Heat 3 tbsp of ghee in a pan. Add the marinated chicken and sauté on high heat for about 5- 7 minutes. Keep the chicken aside. In the same pan, add the whole spices and sauté for a minute. Then add the onions and sauté them till they are translucent . Now add the chicken and sauté for 5 minutes. Close the lid and cook the chicken in its own juice for 2-3 minutes. Then add 1 cup of water and on low heat, cover and cook the chicken for 20- 25 minutes or till the oil separates and there is little gravy remaining. The roast chicken is ready.
For the potatoes
Coat the cubed parboiled potatoes with cornflour and deep fry in oil .
Serve the roast chicken with potatoes. Enjoy
