Stale Bread Cake
1 stale bread, 200 g or 4 cups breadcrumbs
4 eggs
1,5 cup of granulated sugar
1 cup of milk
1/2 cup of sunflower oil (hazelnut or olive oil works too)
4 heaped tablespoons of cacao
1 sachet vanillin, 5 g or ¼ vanilla pod
1 sachet baking powder, 10 g
2 handfuls of peanut
• Fully dry stale bread if it is still soft. You use air fryer or oven to dry it. Then crumb it in a food processor.
• Preheat your oven to 180°C (355°F).
• Transfer the crumbs in a bowl and pour milk on it. Mix and let the bread soak all the milk and have a doughy consistency.
• Using the same processor, beat eggs and sugar on high speed around 3-4 minutes, until color turns into a pale yellow. You can use a mixer as well but using only one machine is more practical.
• Add oil in and continue mixing. Then gradually add the bread crumbs while the processor is working.
• Add cacao, vanillin and baking powder in. Mix until all combined well.
• Lay baking paper into a 20 cm cake tin (around 8 in). Pour the cake mixture into a cake tin. Sprinkle peanuts on top.
• Bake 40-45 minutes at 180°C (355°F) at the bottom rack of your oven. Your fudgy stale bread cake is ready to enjoy
