*1. Pan-Fried Potatoes Made From Parboiled Potatoes*
- 1 lb parboiled potatoes, peeled & cooled
- 1 onion, chopped
- 4 oz bacon, chopped
- shortening
- salt & pepper
1. Slice the cooled parboiled potatoes into thick slices
2. Fry the bacon in your frying pan or skillet for about 5 minutes, then add in the chopped onion and fry everything for another 2 minutes. Set the cooked bacon & onions aside.
3. Heat up the shortening in your skillet or frying pan, then once the shortening is melted and hot, lay the sliced potatoes side by side. Cook them on each side for about 6 minutes until they become golden-brown and crispy.
4. Add in the cooked bacon & onions and season the potatoes with salt & pepper about 2 minutes before they have finished cooking on the second side.
*2. Pan-Fried Potatoes Made From Raw Potatoes*
- 1½ lbs potatoes, peeled
- 1 onion, chopped
- 4 oz bacon, chopped
- ghee or clarified butter
- salt & pepper
1. Peel and slice the potatoes, then soak them in water for about 10 minutes. Once they've soaked, dry the potatoes off with a kitchen towel.
2. Fry the bacon in your frying pan or skillet for about 5 minutes, then add in the chopped onion and fry everything for another 2 minutes. Set the cooked bacon & onions aside.
3. Heat up the ghee or clarified butter in your skillet or frying pan, then once the ghee is melted and hot, lay the sliced potatoes side by side. Cook them on each side for about 6 minutes until they become golden-brown and crispy.
4. Add in the cooked bacon & onions and season the potatoes with salt & pepper about 2 minutes before they have finished cooking on the second side.
*3. Pan-Fried Sweet Potatoes*
- 1 large sweet potato, peeled
- 3 tbsp corn starch
- 1 onion, chopped
- 4 oz bacon, chopped
- vegetable oil
- salt & pepper
1. Peel and slice the sweet potato, then soak it in water for at least 15 minutes. Once they've soaked, dry the sweet potatoes off with a kitchen towel. Mix together the corn starch and salt & pepper, then coat the sweet potatoes in the mixture.
2. Fry the bacon in your frying pan or skillet for about 5 minutes, then add in the chopped onion and fry everything for another 2 minutes. Set the cooked bacon & onions aside.
3. Heat up the vegetable oil in your skillet or frying pan, then once oil is hot, lay the sliced potatoes side by side. Cook them on each side for about 6 minutes until they become golden-brown and crispy.
4. Add in the cooked bacon & onions and season the potatoes with salt & pepper about 2 minutes before they have finished cooking on the second side.
