Gado Gado is an Indonesian salad made with par-boiled vegetables, some protein like tempeh and hard boiled egg and a delicious peanut dressing. The dressing can be complicated and the ingredients hard to find. If you can find coconut milk and Thai red curry paste, all you need is peanut butter and you can make a delicious dressing that you can use for gado gado and also put on vegetables or chicken. The most time-consuming part of this was steaming the vegetables. I boiled the potatoes and steamed most of my vegetables in a strainer over the pot. I made enough for several meals, so now the prep is done and all I have to do is assemble the salad when I'm hungry. Easy, cheap, delicious, low-carb, healthy, high protein. A perfect meal.
