Today we are making khash from the Armenian national cuisine. Khash is prepared mainly from September to April. It is cooked from the cow's legs and stomach. Cooking khash is a whole ritual. They start cooking it in the evening and serve it in the morning. Khash is served with lavash, radish and garlic. There must be salt on the table, because we do not add salt during cooking. Khash is cooked during 8-10 hours. It should be milky, sticky, oily. This is a purely Armenian dish. It has originated from the word խաշել which means to boil.
