Chanterelle mushrooms have such a unique taste. And often used in a variety of pasta dishes.
Today I want to show you how to make this beautiful pasta dish.
You will need:
2 cups fresh or dried Chanterelles( sliced)
4 cups Penne pasta
2 small shallots (diced)
1/2 cup white wine
1 cup heavy cream
fresh parsley
Parmesan cheese
salt and pepper to taste.
Cook pasta as it is directed on the package to " al dente".
In a medium skillet add 2 tbs of cooking oil.
Saute shallots until translucent.
Add Chanterelles and brown slightly.
Add salt and pepper to taste and white wine.
Evaporate alcohol and add cream.
Reduce cream on a medium heat until thickens.
Grate Parmesan cheese.
Your sauce is ready!
Pour sauce over cooked and drained pasta, mix.
Add more Parmesan cheese and a drizzle of extra virgin olive oil!
Sprinkle with fresh parsley!
