Green Tea Crepe Batter
1 cup all-purpose flour
1 cup 1% milk
1/2 cup beer (lukewarm)
4 large eggs
4 tablespoons unsalted butter, melted
3 tablespoons sugar
1 pinch salt
2 tablespoons matcha green tea powder
1 tablespoon Triple Sec
Directions:
1. Mix all the batter ingredients together with a whisk, progressively increasing the speed until it looks smooth and consistent.
2. Cover with saran wrap and refrigerate for 1 hour.
Green Tea Custard
2 cups 1% milk
6 large egg yolks
1/2 cup sugar
1/3 cup cornstarch
1 teaspoon vanilla extract
2 tablespoons unsalted butter (room temperature)
2 teaspoons vanillin sugar (mix with butter)
1 teaspoon matcha green tea powder (mix with butter)
Directions:
1. Boil milk over medium heat on the saucepan.
2. Mix egg yolk, sugar, and cornstarch together.
3. Add a part of the boiled milk into the mixture, mix, and add the rest of the milk.
4. Put the mixture with milk back into the saucepan and heat over medium heat.
5. Add the vanilla extract.
6. Place saucepan over iced water.
7. Add butter + vanillin sugar + matcha green tea powder mix into the custard
