Fermentation’s natural souring process creates a self-sterilizing environment—like vinegar (also a fermented product!), which we even use to clean. 🥒🧪 While there are some exceptions (hello, tempeh and koji 👋), trying to eliminate every single microbe is nearly impossible—and unnecessary.
