Dinuguan, also known as Filipino Pork Blood Stew, is a delectable and rich dish that has so much depth and complexity in its flavor. It is best served with white rice or 'puto' (Filipino rice cake) and can optionally be improved in cooking by adding 'sili' or chili peppers.
This recipe was formulated by my mother and is by far the best version of the dish that I've personally tasted thus far. Give it a try and experience it for yourself!

Ingredients:
1 kilogram or 2.2 pounds of pork shoulder or butt
3/4 kilogram or 1.65 pounds of pork belly (boiled prior to cooking)
1/4 cup chopped lemongrass or 1 bundle whole lemongrass
1 head minced garlic
2 thumb-size sliced ginger
1 medium-size diced red onions
1 tsp whole black peppercorns
1 tbsp dried or fresh oregano
10 pieces dried bay leaves
1 tsp sea salt
8 tbsps soy sauce
8 tbsps white vinegar
2-4 tbsps white or brown sugar depending on preference
1 pork bouillon cube
1 and 1/4 cup pork blood or depending on preference
2 cups of water
