Vegan spinach and pine nut croquettes|gluten free
Ingredients:
For the mixture:
-175g fresh spinach
-110g gluten free flour
-70g olive oil
-50g pine nuts
-2 tsps herb salt
-A pinch of black pepper
-A pinch of white pepper
-A pinch of nutmeg
For the coating:
-Gluten free flour
-Vegan egg mixture(gram flour and water)
-Gluten free breadcrumbs
Method:
-Fry onions until translucent
-Add garlic and fry for a few mins on medium heat
-Add spinach and cook for 3-6mins
-Add flour and cook for se al minutes until all oil and juices have been absorbed
-Add plant based milk stirring until lumps have gone and the mixture is nice and thick
-Add black pepper, herb salt, white pepper and grind in nutmeg
-Turn off heat and add the pine nuts
-Empty the mixture into a tub, cover with parchment paper and place in the fridge for 3 hours until completely cool
-Once cool get ready 3 bowls, 1 with gluten free flour, 1 with gram flour and water and 1 with gluten free breadcrumbs
-Prepare a small amount of mixture to form a croquet, roll in gluten free flour, follow by rolling in vegan egg and finally coat with gluten free breadcrumbs. Continue until all the mixture is used
-Heat a sufficient amount of oil in a pan until a medium high heat is reached
-Fry the croquettes being careful not to burn them
