I love wild garlic it is so versatile and this is my slightly different recipe (not a wild garlic pesto)
This is my Lacto-Fermented Wild Garlic Buds.
Such an easy recipe but so delicious, its amazing on cheese on toast!!

100g Wild Garlic Buds
100g Water
2g Salt
20 Mustard Seeds
3 Black Peppercorns
- 1 week at room temperature
- refrigerate
- make sure that the buds are submerged in brine the entire time
- if there is any mould they must be discarded.
