White Chicken Chili Recipe
Ingredients:
1 tablespoon olive oil
1 medium onion, diced
3 cloves garlic, minced
4 cans Camilla beans (or any white beans), drained and rinsed
1 can cream of chicken soup
4 cups chicken broth
1 can green chilies (diced)
1 1/2 tablespoons ground cumin
1/2 teaspoon white pepper (adjust to taste)
2 cups cooked, shredded chicken (rotisserie chicken works great!)
Fritos (for serving)
Sour cream (for serving)
Shredded cheese (cheddar or Mexican blend, for serving)
Instructions:
Sauté Onion and Garlic:
In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium heat.
Add the diced onion and sauté for 3-4 minutes until softened and translucent.
Add the minced garlic and sauté for another 1 minute, being careful not to burn the garlic.
Combine the Ingredients:
To the sautéed onion and garlic, add the drained beans, cream of chicken soup, and chicken broth.
Stir in the green chilies, cumin, and white pepper. Mix well to combine.
Bring the mixture to a simmer over medium heat.
Simmer and Thicken:
Add the shredded chicken to the pot and stir.
Allow the chili to simmer for 20-30 minutes, stirring occasionally, until the flavors meld and the chili thickens to your desired consistency. If it gets too thick, add a little extra chicken broth to loosen it up.
Serve:
Ladle the chili into bowls and top with Fritos, a dollop of sour cream, and a sprinkle of shredded cheese.
