Canestrelli are traditional Italian biscuits, particularly common in Piemonte and Liguria.
I don't know if their characteristic taste is due to hard boiled yolks, anyway... they're very loved!
Ingredients:
100 g flour*
100 g potato flour
120 g butter
60 g icing sugar (plus more to decorate)
2 hard boiled yolks
a pinch of salt
a pinch of baking powder (optional)
vanillin
*low protein type (cake flour); In Italy: 00 flour
