#7 Donuts
We’re going to be starting off this list with a devilish treat that you’ll love to make every once in a while. Just take 1/3 of a cup of vegan butter, ½ cup of soy milk and 2 tbsp of oil. Put it on the stove and heat it until the butter is melted.
In a separate bowl add 2cups of flour, ¼ cup of sugar, 1 tsp of baking powder, a pinch of salt and mix it. Make a well and add the wet ingredients, then knead with a fork. Flour your hands, take a piece of the dough and form it into a donut. All you got left is to fry it and eat like there’s no tomorrow.
#6 Tofu Sandwich
We’re moving on to a Tofu delight that's going to become your favorite. To make it, first you need to squeeze all the moisture out of the Tofu. Then you cut it into fairly large rectangles and you fry it in a pan with some spices. The usuals include garlic powder, turmeric and soy sauce, but you can use whatever tickles your fancy. After it’s nicely toasted, you take it off the heat and prepare the sauce.
And it’s nothing too fancy. Just take some vegan mayo and some ketchup, mix it together and you’ve got burger sauce. Now, take some dairy-free buns, cut them in half and toast them. Then spread some of the sauce on each side. Lay one hash brown, then 4 slices of the spicy tofu, tomato slices and avocado slices. Add the top and you’re ready to stuff yo’ face!
#5 Overnight Oats
Is there anything easier than overnight oats? Not really. So, here’s everything you will need. ½ cup of rolled oats, and another 1⁄2 cup of almond milk. Then you add 2 tbsp of peanut butter, and 2tbsp of strawberry puree or jelly. You add 1tbsp of ground flaxseeds and 1tbsp of maple syrup.
After you get all the ingredients, it’s only a matter of putting them in a mason jar, mixing everything thoroughly and popping them in the fridge. Perfect for when you’re on the go.
#4 Scrambled Tofu
For this, the procedure is pretty straightforward. You just take your block of tofu, blot it with a paper towel and put it in the microwave. Take it out and scramble it with a fork. Then, what you do is you dice some onions and cut a bell-pepper into strips. Put everything in a pan with a little bit of oil, add salt, pepper, garlic powder and ground cumin, and fry it off. That’s it. Now you can serve it.
#3 Chocolate and Raspberry Chia Seed Pudding
Just like the overnight oats, this is fairly simple. You just take ¼ cup of chia seeds, 1tbsp of cocoa powder, 1tbsp of maple syrup, 1tsp of vanilla and a cup of coconut milk. Mix everything well together, and plop it in the fridge overnight. Tomorrow morning, you just pour it in a bowl, add some raspberries and chocolate chips on top.
#2 Muffins
Now, these might seem complicated, but when we tell you how easy it is to make them, your jaw will drop to the floor. You just take 9 bananas and you mash them up with a fork, add 1cup of nut butter and mix it into the bananas. You’re actually done. Now, you just add whatever you like inside. For this example, we chose blueberries and cocoa. Once you put it in a greased muffin tray, just plop them in the oven and bake for 20minutes at 350degrees F.
#1 Pancakes with Blueberry Compote
And of course, we saved the best for last. For this recipe, you will start by making the blueberry compote. In a saucepan, add ½ cup of sugar and ½ cup of water. Then add 1.5 cups of blueberries, and boil until the blueberries turn soft. Set it to one side until you make the pancakes.
For them, you will need 1.5cups of flour, 1tbsp of sugar, 2tbsp of baking powder and some salt. To this mix, you will add 1 and 1⁄4 cups of soy milk and 2tbsp of oil, then mix everything together. Now you just fry em’, stack em’ and top em’ with that blueberry compote.
