Dairy and Gluten Free cake.
Recipe to make the 3 x 6 inch sponge layers:
Sieve 500 grams of Free From Gluten Free Flour, 500 grams of caster sugar and 4 heaped tablespoons of cocoa powder. Then mix in 450mls of soya milk or preferred alternative milk and 175mls of olive oil. Mix with a electric hand mixer for two minutes. Transfer evenly into 3 6inch cake tine that have been greased with olive oil.
To make the fake cream cheese filling and frosting:
Mix 200ml of cream alternative (this can usually be found in the dairy free fridge in the supermarket) Mix for 4 minutes with a electric hand mixer. Add in 200grams of the alternative cream cheese. (make sure its cold so it created lumps and the frosting will look like mud at the end. Add in 4 sieved table spoons of Cocoa and mix for another 5 minutes. Then start to build your cake and cover with the frosting.
