All is well and have been very busy with work these last few months. Really miss getting to connect with everyone on a regular basis and looking forward to having to connect and explore new places with everyone.
Working late into the night, as with most nights, I get a bit of a craving for something sweet. With not too many ingredients on hand and not too much time, I have just the answer to satisfy this craving: Ginger Milk Pudding! Whether it's called a pudding, a custard, a curd, it is simply a tasty and quick dessert. In fact, one of the oldest Chinese dessert around.
Here's how to make it:
1 cup of full fat milk or cream (table cream, heavy cream)... the fattier, the better...
1 knob of ginger
1 tablespoon of sweetener (or to taste).
Sweeten a cup of milk/cream to taste and heat in a microwave for about 2 minutes until milk/cream has reached slightly about 70 degrees Celsius.
Using a fine grater, grate approximately 1 heaping tablespoon of ginger on to a paper towel.
Wring out the juice of the grated ginger into a bowl (there should be a little over a teaspoon of ginger juice).
Pour the heated milk/cream into the bowl containing the ginger juice.
Set aside for 2 minutes for the mixture to coagulate. (Ginger contains an enzyme, zingipain, that coagulates milk proteins at temperatures 70 °C)
