Inspired by the delicious viral feta pasta, this cherry tomato ricotta pasta will not disappoint. 🍅✨🌿
It's so incredibly easy to whip up and it's delicious.
Ingredients:
1-2 garlic cloves
500 g cherry tomatoes (17.6 oz)
230 g pasta (8.1 oz)
225 g drained ricotta (1 cup + 2 tbsp)
Basil
80 ml olive oil (1/3 cup)
Salt to taste
Red pepper and black pepper
Instructions:
1. Preheat the oven to 400°F (200°C).
2. Place cherry tomatoes, minced garlic, salt, red pepper flakes, black pepper, and olive oil in a baking dish. Coat it in olive oil and mix well.
3. Add the ricotta cheese in the middle and drizzle it with a bit of the Olive oil and pepper.
4. Roast the mixture in the oven for about 20-25 minutes, or until the tomatoes are soft and bursting with flavor.
5. Remove the dish from the oven and add fresh basil leaves.
6. Transfer the roasted mixture to a blender or food processor and blend until smooth.
7. Meanwhile, cook your favorite pasta according to package instructions.
8. Once the pasta is cooked, drain it and toss it with the blended sauce.
9. Serve immediately.
