Serves 4-6 people
Prep time – 45 minutes
Cook time – 20 minutes
Ingredients:
2 pouches Seeds of Change® Seven Whole Grains
½ lb. green beans, cleaned and sliced in half lengthwise
¼ tsp. salt
2 tbsp. olive oil
1 red bell pepper, roasted, skins and seeds removed, and cut into short strips
¼ lb. grilled sweet sausage, sliced at a 45 degree angle about ½ in. thick
2 cloves garlic, sliced
1 lb. manila clams, washed and scrubbed
1 cup chicken stock
Juice of 1 lemon
2 scallion tops (greens only), thinly sliced at a 45 degree angle
Directions:
1. In a medium bowl, combine the green beans with one tbsp. of olive oil and salt. Toss until the green beans are well coated with oil and evenly seasoned.
2. Heat a large sauté pan over high heat until it is smoking hot.
3. Add the green beans to the hot pan, and sauté until evenly charred and browned (approx. two minutes, depending on how hot your pan is).
4. Remove the green beans from heat and set aside.
5. Heat a large sauce pan over medium heat and add the remaining oil.
6. Add the cleaned clams and sliced garlic.
7. Stir the clams around until the garlic begins to brown and add the chicken stock and cover with a lid to steam the clams open. This should take only a couple of minutes.
8. When the clams open, remove the lid and add the sliced sausage, peppers and lemon juice.
9. Add the contents of the two pouches of Seeds of Change® Seven Whole Grains and stir to incorporate.
10. Cover with lid until grain blend is hot and then transfer everything onto a serving platter. Garnish with sliced green onions and serve.
