Try this delicious chutney made with fresh pineapples. You can serve it as an accompaniment with any meal and enjoy!
PINEAPPLE CHUTNEY
Ingredients
1 medium pineapple, peeled
1 tsp cumin seeds
1 tsp onion seeds (kalaunji)
1 tsp fennel seeds
1 tsp yellow mustard seeds
¼ tsp fenugreek seeds
1 tbsp ginger paste
¼ cup sugar
Salt to taste
¼ tsp black salt
½ tsp red chilli flakes
Method
1. Roughly chop the pineapple.
2. Dry roast cumin seeds, onion seeds, fennel seeds, yellow mustard seeds and fenugreek seeds till fragrant on medium heat.
3. Transfer into a mortar and coarsely crush the mixture with the help of a pestle.
4. Heat a non-stick pan. Add the pineapple and sauté on medium heat for 2-3 minutes. Add ginger paste, sugar and salt and mix well. Add ¼ cup water and mix well.
5. Cover and cook on medium heat for 10-12 minutes or till the pineapple becomes soft and mixture thickens.
6. Add black salt, red chilli flakes and 1 tsp ground mixture, mix and cook for 1-2 minutes.
7. Take the pan off the heat and allow the chutney to cool to room temperature. Store in an air tight container and serve as required.
