Whipped feta with roasted tomato
1 block feta cheese
1/2 cup extra virgin olive oil
2 tbsp honey
1/2 lemon
10 Oz grape or cherry tomatoes
1 bulb garlic, top sliced off so you can see the garlic cloves
1/2 red onion, sliced
Sprigs of fresh rosemary and thyme
1/2 tsp salt
1/2 tsp black pepper
1 baguette
Preheat oven to 350°
Add tomato, onion, the garlic bulb, and thyme and rosemary to a sheet pan. Drizzle with 2 tbsp olive oil, salt and pepper. Make sure to drizzle oil in the garlic bulb
Bake 30-40 minutes until the veggies are roasted
When that’s finished to a food processor add the feta, the roasted garlic cloves, the thyme leaves, honey, onion, 2 tbsp olive oil , the zest and juice of the lemon, and salt and pepper taste. Blend well until smooth, add more oil if needed if it’s too thick.
Add to a bowl and top with the roasted tomatoes, add a drizzle of olive oil on top
Slice the baguette and add to a sheet pan, drizzle olive oil and salt and pepper on top. Bake for 10-12 minutes
