अळूवडी | Alu Vadi Recipe | Step by Step Alu Vadi | Authentic Maharashtrian Snack
This is made from colocasia leaves and its an amazing snack or side dish to make any meal complete
Ingredients
2 Bunches of Colocasia /Alu leaves
1 cup of chickpea flour/besan
1 tbsp Rice flour
1 tsp cumin seeds
1 lime sized ball of tamarind soaked in warm water(pulp extracted)
2 tbsp of jaggery/gul
2 tsp of red chilli powder
1/4 tsp of turmeric powder
salt to taste

Method:
Add the besan to a bowl,add the rice flour, cumin seeds,red chili powder, turmeric powder and salt.
Mix everything well. add the jaggery . Add the tamarind pulp ,mix well.Add a little water to make a thick batter as shown in the video.
The consistency of the batter should neither too thick nor too
thin. You should be able to spread it easily.
Wash and dry the alu leaves. Prep the leaves as shown in the video.
Lay the biggest/largest leaf as the base, apply some of the paste and spread it evenly all over the leaf. Now place the next largest leaf and apply the paste. repeat this process for about 5 leaves
Fold the sides and spread the paste again.Roll the leaves as shown in the video.
Steam the leaf rolls for 15 mins .. let the rolls cool completely.cut into thin rounds
Deep/shallow fry till crispy.
