Refreshing cooling dessert suitable on a hot day, the longan jelly pudding gives a very soft texture, silky and melts in your mouth.
Ingredients:
[Makes about 25 small cup container]
Longan (in syrup) – 1can
Agar-agar powder - Clear (10gm)
Sugar (180g)
Evaporated Creamer (390gm)
Pandan leaves (50gm)
1800ml Water
Step by Step:
1. Prepare jelly cups and put 1pcs longan in each cup.
2. Boil 1800ml of water with pandan leaf for 20 minutes and then discard the pandan leaves.
3. Add sugar (180g) in small portion & stir until melted.
4. Add agar-agar powder. Keep stirring to prevent clumps.
5. Let it simmer for about 5 minutes. Turn off heat.
6. Add in the Longan Syrup and Evaporated creamer. Stir evenly.
7. Pour into jelly cups. Leave to cool before putting into fridge to chill.
8. Chill for at least 2 hours to completely set.
9. Serve chilled.
