GINISANG AMPALAYA (Sauteed Bitter Gourd)
Sautéed bitter gourd this Filipino veggie recipe is very easy to make and have only simple ingredients. Not to mention its nutritional value because of its bitterness.
Ingredients:
2 medium size bitter gourd (ampalaya) sliced thinly
1 tbsp cooking oil
3-4 garlic cloves (pounded)
Half of large onion (thinly sliced)
1 diced tomato
1 tsp fish suace
1 raw eggs
Freshly ground black pepper
Salt to taste
¼ cup water
Procedure:
First off we need to get our stuff on, Pound the garlic… slice half of large onion thinly… dice small tomatoes, set aside. Cut the bitter gourd into 3 parts vertically.. Remove the seeds by scraping it using spoon… then cut diagonally with your desire thickness, around 3-5mm thickness your choice. In a bowl.. put half full of water, sprinkle 1 tablespoon of table salt, dissolved in water… add in the bitter gourd.. it should be full submerged into the water. Soak for about 20-30 minutes, this process will eliminate its bitter taste. Drain the veggie… rinse twice or until the water becomes clear. Drain into the strainer.
In a small pan over medium heat. Pour ½ to 1 tablespoon of cooking oil. Swirl the pan to spread the oil. Sauté the onion… sprinkles with 1 tsp of fish sauce, sweat the onion. Add in the pounded garlic.. Stir… include the tomato.. Stir, pour 1 tablespoon of water.. Cover the lid and let it caramelized. Whilst waiting for that.. In a small container.. bit 2 raw eggs.. set aside..
When the tomato is already caramelized… sprinkle freshly ground black pepper, I reapeat FRESHLY GROUND!! Mix well until the liquid is rendered… add the bitter gourd… combine well as it should be… season with salt according to desired saltiness and taste. Stir.. when its drying.. add water little by little.. Cover and let it cook… add the bitted eggs.. stir and let the eggs cook… now lets do the plating…
Then Serve with steamed rice..
