Homemade breakfast sausage is so simple to do and eliminates much of the unwanted ingredients in store bought. Pork can be really tricky to understand but I recommend getting pasture raised pork from a local farm or online through sources like Moink, ButcherBox and others.
I love making this version because the flavor of the fresh herbs adds freshness and a hint of maple syrup brings well rounded sweetness. Plus there's no nitrates or nitrites!

1 pound ground pork homemade or store bought
1/4 teaspoon black pepper
1 teaspoon sea salt
1 teaspoon dried fennel seeds crushed
1/8 tsp ground nutmeg
1 tablespoon fresh sage
1 tablespoon fresh thyme
1/4 teaspoon red pepper flakes
2 teaspoons real maple syrup
