Ingredients:
Crocodile tail meat
Himalayan Salt
Cracked Pepper
Chili Flakes
Cumin
Garlic
Red Onion
Chili
Ginger (optional)
Rice wine vinegar
Soy sauce
Chili paste
Fresh lime juice
Palm sugar
Sesame oil
Sesame seeds
Thai Basil
Method:
Carve out fillet from crocodile tail
Chop down fillets to bite sized cubes
Season cubes with Himalayan salt, Cracked peppers, Chili flakes, Cumin
And then put aside the meat
Finely chopped garlic, chili
Roughly chopped red onion
Add finely chopped ginger if you like
Put aside
Making the marinade
Get a small bowl
Add 100 ml of rice wine vinegar
250 ml of soy sauce
1 teaspoon of Asian chili paste
Micro plan half a lime worth of zest
To add sweetness, add 1 teaspoon of palm sugar (optional)
Heat up wok of charcoal or grill (really hot)
Coat wok with sesame oil
Once wok is very hot place crocodile cubes
Add sautéed ingredients (onion, garlic, chili)
Press test crocodile meat until cooked through
Lay crocodile meat out on plate
Add marinade
Squeeze fresh lime juice on crocodile
Sprinkle sesame seeds over the top
Garnish with Thai basil
