Puto or Filipino rice cake is very popular in the Philippines. Ube or purple yam has been on trend lately, but I have been in love with ube eversince.
This is not your ordinary puto. It is very moist, slightly sweet, packed with ube flavor then topped with cheese to balance out all the flavors.
RECIPE:
1 cup rice flour
1/2 cup all purpose flour
1 Tbsp baking powder
1/2 tsp salt
1/2 cup sugar
1 1/2 cup evaporated milk
1/2 cup ube halaya/ purple yam jam
2 Tbsp butter, melted
1/2 tsp ube extract
cheese slices/ grated cheese for toppings
