Anna Sudarso teaches her son, Peter Sudarso, how to make their family’s take on Beef Rendang, an Indonesian curry served over rice, for the very first time.
BEEF RENDANG
INGREDIENTS
2 lbs of beef (chopped into 1.5" cubes)
1 red onion
1 clove of garlic
1 piece of ginger
3 red jalapenos
1 piece of galangga
1 stalk lemongrass
coriander
nutmeg
cumin
turmeric
cloves
2 boxes of coconut milk (200 mL each)
5 kaffir lime leaves
INSTRUCTIONS
Chop onion, garlic, ginger, jalapenos, galangga, and lemongrass. Place ingredients into blender until it becomes a fine paste.
Add 200 mL of oil to a pot and saute the paste until very fragrant. Add a little bit of coriander, nutmeg, cumin, turmeric, and clove powder.
Pour in coconut milk. Then add beef, followed by kaffir lime leaves. Let cook for 3 hours, stirring occasionally.
Serve over rice.
