PAL PAYASAM
Preparation time: 15 minutes
Cooking time: 30 minutes
Serves: 4
Ingredients:
1 ltr full cream Milk
½ cup/100 gm Rice – soaked for 15 mins
1 cup/150 gm Jaggery powder (Gur)
2 tbsp Pure Ghee
Few Saffron strands – soaked in 1 tbsp warm water
½ tsp Cardamom powder (Hari Elaichi)
2 tbsp Almonds – chopped
2 tbsp Cashews – chopped
2 tbsp Raisins (Kishmish)
Method:
1. Heat 1 tbsp pure ghee in a pan. Add soaked rice & sauté for a minute.
2. Add milk and saffron induced water. Cook on low flame until rice is tender.
3. When the mixture becomes thick, add gur powder & simmer on low flame stirring continuously for a minute so the gur is mixed properly.
4. Heat 1 tbsp pure ghee in a separate pan & fry all dry fruits until the kishmish swells.
5. Add half of the fried dry fruits to the payasam and mix well & keep half to garnish at the time of serving.
6. Serve at room temperature.
