Beetroot salad of restaurants
Ingredients
4 medium beets
2 tablespoons vinegar
1 tablespoon oil
1 teaspoon salt
Juice from half a lemon
Instructions
· Place 4 medium medium-sized beets in a pot of water and simmer for 30 minutes until the beets soften. Remove from the pot and set aside to cool.
After the beets have cooled peelers and cut them into medium cubes with a wavy knife or scrap it with a coarse grater into a bowl. Add 2 tablespoons of vinegar, juice from half a lemon, tablespoon oil, a teaspoon of salt and stir.
