Learn how to archive and unarchive conversations on Samsung Galaxy S23. The same applies to Samsung Galaxy S23+ and Samsung Galaxy S23 Ultra.
If you want to hide a conversation, you can archive it. This will hide the conversation from the others. It's a better way than deleting the entire conversation from your chats. Normally, the default messaging application on Android phones is Google Messages.

Launch the Messaging application
Find the conversation you'd like to archive
Tap and hold on to the conversation
Tap on the archive icon at the top

You can swipe left or right to archive that particular conversation or chat.

Launch the Messaging application
Tap on the three lines next to the search bar
Tap on Archived
Find the conversation you'd like to unarchive
Touch and hold the conversation
Tap on the unarchive icon at the top
