First steam the chicken with a pinch of salt, maggi, onion, & some of my fresh spice for 10-15 minutes or until tender,
Then, cut your carrots in straight shapes or which ever you prefer. Peel the plantains and cut into little square-like shapes and fried. While you are at it, fried the steam chicken as well...as shown in the video.
Next, blend your tomatoes along with some of my fresh spice. Put some Canola oil in the pot, chopped some onions and when the oil is hot and ready, put the onion in the oil and put the blended tomatoes as well. Cook for 30 minutes or until the sour taste has been eliminated then add your carrots, the water from the steam chicken/another cup of water if needed and cook again for another 10-15 minutes.
Finally, add the fried plantains, chicken into the sauce to taste. If you find it to be too thick; you can add water as needed to taste. And lunch is served ENJOY!
