I've been using my ooni koda 16 for a number of months now, so i feel ive had some time to get to know this pizza oven! In this video, i share with you a few of my top tips for use when cooking with the koda 12 or koda 16 gas powered pizza oven!
PIZZA DOUGH RECIPE - my usual go to (Bakers Percentages)
100% - Caputo Nuvola Pizza Flour
68% - Warm Water
2.6% - Fine Sea Salt
0.3% - Active Dried Yeast
METHOD
Mix yeast & water,
Mix Flour & salt
Combine ingredients in bowl until it forms a large ball.
Bulk Ferment for 2 hours at RoomTemp.
Divide & shape into dough balls
Second fermentation - 24/48 hours Cold Temp.
Bring up to room temp before stretching & cooking.
