Healthier Versions recipes for macronutrient restrictions. I share these recipes because I know what it's like to live with dietary restrictions. Because of this eating lifestyle I have been able to avoid being put on 4 medications, maintain a 17-pound weight loss, maintain a blood pressure range of the mid 120's to the low 130's, as well as maintain an a1c in the low 5's.
Today's recipe is Indulgent and Delicious. I got the sugar and carbs as low as I could to keep these qualities. They are also Gluten-Free. The Recipe and Healthy Highlights are as follows:

Ingredients
Cake
Baker's German Sweet Chocolate 1 pkg
Butter (Unsalted) 6 tbs
Margarine (Imperial) 6 tbs
Sugar ¾ cup
Sweetener ¾ cup
Egg Whites (Save Yolks) 4 lg
Eggs 1 lg
Vanilla 1 tsp
Sorghum Flour 1 cup
Baking Soda 1 tsp
Kosher Salt ¼ tsp
Almond Flour 1 cup
Xanthan Gum 1 tsp
Buttermilk 1 cup
Frosting
Egg Yolks 4 lg
Evaporated Milk (12oz) 1 can
Vanilla 1 ½ tsp
Sugar ¾ cup
Sweetener ¾ cup
Butter (Unsalted) 6 tbsp
Margarine (Imperial) 6 tbs
Coconut (Bakers) 7 oz
Pecans (Chopped) -Fishers 1 ½ cups
Directions
1) Preheat oven to 350 degrees
2) In a large microwave bowl, melt chocolate and butter for 2 minutes
3) Stir until chocolate is completely melted
4) Add sugars and mix until well blended
5) Add eggs one at a time mixing well in between
6) Blend in vanilla
7) Combine sorghum flour, baking soda, and salt
8) Add to chocolate mixture, mixing well
9) In a small bowl, combine almond flour with xanthan gum
10) Alternating with buttermilk, add to chocolate mixture
11) Spoon batter into 24 muffin cups
12) Bake 25-30 minutes until inserted toothpick comes out clean
13) Cool in pan for 10 minutes
14) Place on cooling rack to cool completely
15) In a large saucepan, whisk together egg yolks, milk, and vanilla
16) Stir in sugars and butters then cook on medium heat for 15 minutes or until thickened and golden brown while constantly stirring
17) Remove from heat then mix in coconuts and pecans
18) Cool for 5 minutes then frost cupcakes
