Moroccan Flat Bread Msemmen
Ingredients:
2.5 cups of flour (cup's size is 250 ml)
Half tea spoon baking powder
Half tea spoon salt
Half tea spoon sugar
Water around 1 cup (cup's size is 250 ml), might be less, and might be more, depends on your flour
100 gm of semolina
100 ml of sunflower oil
Mix well all the dry ingredients. Pour gradually some water till you knead the dough. The dough should be soft and elastic. Let the dough rest for 30 minutes. Cut the dough into 6 pieces and make medium balls. Apply some oil on the desk top and on the top of the balls. Leave the dough to rest another 15 minutes more.
Now you can start stretching the dough as much as it allows you, apply some oil on the top and a bit of semolina. Fold it as on the video. Let it rest for another 15 minutes.
Press each piece with your fingers till you get a square flat bread/msemmen and put it on a hot pan — I use a non-stick pan, so no butter or oil needed. Keep turning it several times till it gets ready, 30 seconds per side. Once ready - keep the hot msemmen in a plate with cover, it gets softer in this way. You can serve the msemmen with honey and nuts, or cheese and honey❤️
