Curried Sausages
A family favourite, well maybe back in the 1980’s! But really an easy and tasty meal to add flavour to plain beef sausages. Like all things quality snags will make or break this recipe. I chose to use thin sausages in the video but you could use thick sausages. Another add if you would like is to add some fruit chutney (maybe a ¼ cup) to give it some sweetness. Serve up with rice or mash!
Serve 4
Ingredients
600g thin beef sausages
1 onion, sliced
2 garlic cloves
1 carrot, sliced
½ cup broccoli, chopped
1tbsp curry powder
3tbsp cornflour
2 cups chicken broth
1 tsp sugar
50g butter/oil
Method
1. Heat butter in a frypan set at medium high
2. Cook sausages in the butter. Turning regularly to brown them off. Once cooked remove from frypan and slice diagonally (bite size)
3. In the same frypan add garlic and onion. Cook for 2min until onion is starting to soften.
4. Add curry powder and stir for 30seconds
5. Add flour and mix for 30 seconds
6. Gradually add 500ml of chicken stock. Mixing well to make sure no lumps.
7. Add carrots, sugar (fruit chutney) and stir well.
8. Add sliced sausages and broccoli and simmer till sauce thickens. If it is already thick add 50-100ml water.
9. Serve with rice or mash.
