Okay, yes, falafels are traditionally vegan, but we wanted to make sure people knew.
Falafels are an absolutely delicious main dish customary in the Middle East.
I like to say if a hushpuppy and a meatball had a baby, it would be a falafel.
Use them to make our falafels bowls with turmeric garlic rice, tahini sauce and quick pickled onions. Add to pitas, make a burger, or just by themselves, they are so delicious.
Once the chickpeas are soaked, they can come together in under 20 minutes!
Traditionally they are fried, but we are sharing oil free methods too!

Ingredients:
* 1 cup dried garbanzo beans (chickpeas)
* 1/2 sweet onion, chopped into 4 pieces
* 4 cloves garlic, minced
* 1/2 cup fresh cilantro, roughly chopped (Can sub for parsley if you don't like cilantro)
* 1 tbsp chickpea flour
* 2 tsp lemon juice
* 1 tsp salt
* 1 tsp freshly cracked black pepper
* 1 tsp ground cumin
* 1/2 tsp ground coriander

Instructions for Falafels:
1️⃣ Soak dried chickpeas overnight. Drain chickpeas from water and lay them out on a towel. Thoroughly pat them dry. Get as much moisture out as possible.
2️⃣ Add chickpeas to a food processor with the remaining ingredients. Pulse, scrapping down the sides often, until all the ingredients are chopped up and a thick batter is left.
3️⃣ Roll into 1" balls (you can use a cookie scoop to ensure even size).
4️⃣ Once all the balls are made, heat oil in a deep fryer or heavy bottomed pot and bring the temperature up to 350 degrees F. Add the baking soda to the oil.
5️⃣ Drop falafels into the oil and cook for 2 1/2-5 minutes, moving around to ensure golden brown on all sides.
6️⃣ Remove from the oil and lay on a towel lined plate to remove excess oil. Repeat with remaining balls.
