- 25ml Sesame oil
- 4 cloves of Garlic finely chopped
- 3 Banana Shallots finely chopped
- 2 Red Chillies finely chopped
- 1TBS Ginger finely grated
- 1/2 TBS Brown Sugar
- 2 TSP Mirin
- 125ml Rice wine Vinegar
- 65ml Soy sauce
- 25ml Fish sauce
- 12ml lime juice
- 1 TBS coriander chopped

Recipe for 4 people
- 500g Sashimi-grade tuna
- 1 TBS Chives finely chopped
- 2 TBS toasted sesame seeds
- 4 TBS Soy sauce
- 2 TBS Sesame oil
- 1 TBS Wasabi paste
- Salt to taste
